I hope everyone had a wonderful weekend! Today was a great day, other than it was laundry day.....ewwww. :) As ya'll know we live in Texas and it is HOT here. Imagine my suprise when my husband requested potato soup for dinner. Soup? It's 100 degrees outside...uugghhh. But then I relented, of course. :) This is a really good recipe so I thought I would share. Please thank the Genius for gathering the ingredients and taking the pictures for this recipe.
You will need:
8 cups peeled, cubed potatoes
2 cups finely chopped celery ( I like mine a little thick )
2 cups diced onion
4 cups water
3 teaspoons salt
2 cups milk
2 cups whipping cream
6 tablespoons melted butter
2 tablespoons parsley
1 teaspoon caraway seeds
1/4 teaspoon black pepper ( I add a bit more )
1/4 teaspoon garlic powder
1 cup evaporated milk ( if necessary )
Note: This will serve a family of four.
In a large soup or stew pot, add water,salt,potatoes,celery and onion.
It should look something like this:
Cook on medium heat for 20-25 minutes, until potatoes are done. Add milk and cream and reduce heat. Add butter, parsley, caraway seeds,pepper and garlic. Simmer until ready serve. If your soup is too thick add evaporated milk. ( Note: I have never had to add the pet milk. )

Some of you may know this already but my family & I go to the track 4-6 nights a week. My husband jogs a mile ( then walks with the genius and I ). We usually walk 2 miles. We also love to feed the ducks. :) Tonight I thought I would take you with me. Do you have your tennis shoes on? Let's go.....

On the way to the track someone piped up and said, "Wouldn't a shaved ice be good right about now?"....ok. I'll tell you, it was me....lol. But, my DH & daughter said "Yep, let's go!"

This would be mine, I can never make up my mind ( cause' I want it all. ) So, I get the Rainbow: banana, strawberry and bubblegum. You have not lived until you've tried this. :) Sorry, took a bite already.
Off to the track we go. We were going to try and finish our treat in the car but the ducks started crossing the road.....do you think they recognized us?

one of my favorite memories as a child was my Omie's (that is grammy in german) potato soup. I used to eat until I was almost sick...and then ask for it as a snack! I never did get her recipe...and even though she is still alive, I am not sure she even knows what it is...her pinches and dashes are so not the way to measure..lol
I will for sure print this post off and try it...who knows...maybe I will mail her a copy and tell her try yours too! she is a silly little lady with a very thick german accent...I am sure she would get a kick out of the fact that I am still trying to get the recipe!
I secretly think she is not giving it out more clearly, so that I am forced to come to her for it when I can't stand the cravings!

Jessica, Yep!! I mowed the yard. I know I probably shouldn't. I don't think the walking hurts me at all. But, Starting the mower wasn't a fun task with a hurt back. I just about asked the neighbor to start it. Then, I gave it one more try. I'm glad that's done. Larry would do it but they are extremely busy at work. He's not getting home until dusk.
